Sugar Free Peanut Butter Cups (Cheaters Addition)

One of my all time favorite childhood things was when my grandparents would come visit and bring one of those super sized bags of Reeses cups. We'd pop those babies in the freezer and be in chocolaty heaven for months.... Okay, so I am actually one of eleven  children. So honestly they may have lasted more like 2, maybe 3 days tops. But never the less, it was epic.

I still really (really) enjoy a good Reeses Cup, but I do try to avoid sugar and processed foods. These little babies are:

  • Good enough that when the temptation for sweets inevitably arises, its easily satisfied.
  • They are also a piece of cake to whip up and last pretty much forever in the freezer.
  •  Also, they are surprisingly healthy thus making these rise to incredible heights in my humble opinion.

I use cacao powder because its healthier than your every day cocoa, but cocoa will work great. You can also sub carob powder. I do this for my dad who is allergic to chocolate. (I know, could anything be sadder?)

I use peanut butter because- ya know- Resses. But any nut butter will work too.

 Without further ado:
Ingredients:

  • 1/2 Cup Coconut Oil
  • 1/2 Cup unsweetened Peanut Butter
  • 2 Tablespoons Cacao Powder
  • 1/2 Teaspoon Stevia Powder (or sweetener of choice)
Directions:

  1. Line a muffin pan (or mini muffin pan depending on the size you want) with liners.
  2. Add ingredients into a sauce pan.
  3. Over Medium heat, stir until combined completely.
  4. Pour into muffin tins and freeze until firm.
Tada! Keep them in the freezer until they're gone:)
